I used granulated maple syrup when creating this recipe to make them paleo friendly! However- I wanted to mention that organic cane sugar will work too. Which is obviously much easier to come by (and is much more cost effective) sugar to bake with. You can also safely use any granulatedsugar free sweeteners. I would recommend alluose as I find it works the best & doesn’t have the odd icy after taste that erythritol and xylitol have.
Can the almond flour be subbed out for another flour? I don’t recommend it. While another nut or seed flour like cashew flour would work- I have yet to come across one that is as finely ground as almond flour is. Sunflower seed flour would also potentially work- but that one tends to turn green when mixed with baking powder. The majority of my muffin recipes are nut free- so if nuts are an issue for you I would recommend making one of the other recipes instead. <3
How to make the muffins dairy free: Simply swap out the cream cheese for a dairy free variation. Tofutti is my personal favorite to work with as it performs the same as regular cream cheese. Then of course- opt for a dairy free milk. Any variation will work great.

These beautiful pink muffins burst with fresh strawberry flavor, when you cut them open the cream cheese adds a special touch!
Ingredients
2 packed cups Blanched Almond Flour (180g)
¾ packed cup Potato Starch or Sweet Potato Starch (132g)
¾ cup of Granulated Maple Sugar (174g)
1 tsp. Baking Powder
¼ tsp. Kosher Salt
⅓ cup Melted Coconut Oil (60g)
4 Large Eggs
1 TBSP Vanilla Extract
¼ cup Milk (dairy or nondairy) or Water (50g)
1 tsp. Lemon Juice
One 1.2 package of Freeze Dried Strawberries, crushed into a powder (34g)
One 8 oz. Package of Cream Cheese Cream Cheese, softened (227g)
Instructions
Preheat oven to 350 degrees
2. In a bowl mix together all ingredients up to the lemon juice once mixed through add in the freeze-dried strawberries.
3. Spray a muffin pan with nonstick spray, using a spoon drop in a dollop of batter.
4. Place ½ T of Cream Cheese in the center of each muffin, and cover with more batter. Muffin tins should be ¾ of a cup full.
5. Place in oven for 20-22 minutes.
